Portuguese Easter Bread
Ingredients
3 yeast cakes
1 cup lukewarm water
12 cups flour
1 tbs salt
1 ½ tbs lemon extract
3 cups sugar
12 eggs, well beaten
½ pound butter, melted
1 pint lukewarm mild
3-4 drops yellow food coloring
- Dissolve the yeast in lukewarm water and set aside
- Mix salt and flour together
- Mix eggs, food coloring and lemon extract with lukewarm milk
- Combine all and knead, add flour as needed till the dough goes from sticky to just not sticky. It will start to not stick to your hands and then stop adding flour.
- Cover and let rise until doubled in size
- Place in buttered pie pans, may place a hard boiled egg on top with dough over it to make a cross
- Let loaves rise again until doubled
- Bake at 350 until golden brown for about 45 minutes, Makes about 7 large loaves
